These One-Pot Camping Recipes That Will Make You Go Outdoors More

You deserve a satisfying and filling meal after a long day outdoors. But just the thought of preparing your food and cooking it (then cleaning up after!) over a campfire makes you just want to eat something ready-to-eat. Good thing there are quick recipes that can be prepared and cooked with no hassle, like one-pot meals. One-pot meals are perfect for camping – they don’t take forever to cook but they’re extremely filling!

Try these one-pot camping recipes the next time you’re on an outdoor adventure:

Campfire Taco in a Skillet

What you need:

  • 1/2 kg. ground beef
  • 1 can fire roasted diced tomatoes
  • 1 can pinto beans
  • 1 package Mexican cheese mix
  • 1 green bell pepper
  • 1 small onion
  • 2 cloves minced garlic
  • 1 tablespoon oil
  • 1 tablespoon chilli powder
  • 1 tablespoon cumin
  • Salt

Heat oil in a skillet over hot campfire coals then cook onion and bell pepper for 1 minute. Add the garlic, season with chilli powder, cumin and salt and cook another minute. Add the ground beef to the skillet and cook until browned, about 5 mins.

Stir in the tomatoes and beans until heated through. Remove from heat and top with cheese. Serve when cheese has melted.

The Ultimate One-Pot Camping Breakfast

What you need:

  • 8 eggs
  • 3 large gold potatoes, sliced into 1/4-inch pcs.
  • 2 bunches spinach
  • 1 medium onion
  • 1 red bell pepper
  • 1/4 cup grated parmesan
  • 3 tablespoons butter
  • 1/2 teaspoon chilli flakes
  • Salt

Fill a cast iron skillet with water (about 3/4 full) and add the slices of potato. Boil for 6 minutes over your campfire until potatoes are soft (easy to slice). Drain and set aside.

Heat the oil in the same skillet and sauté the onion and red pepper until soft. Add the potatoes and season with chilli flakes and cook until potatoes are golden, about 3-5 mins.

Add the butter and spinach and stir until butter has melted. Lastly, make 4 “wells” in the potatoes and crack 2 eggs in each. Cover the skillet and allow the eggs to cook from the heat of the campfire, to your desired doneness.

Remove from the heat of the campfire then allow to cool for a few minutes before slicing and serving!
